Delicious. My favorite way to prepare eggplant. I use a Power Air Fryer Oven Elite. Most of the time I omit the spaghetti sauce and mozzarella. I serve it with a sprinkle of fresh shaved parmesan

I skipped combining the olive oil and breadcrumbs and drizzled the oil instead before air frying
