- 1 yellow onion (medium, chopped in small pieces)
- 1/4 cup green onion (sliced)
- 2 red bell peppers (seeds removed and chopped into 1/2 inch pieces)
- 1 Tbsp. minced garlic (minced garlic from a jar is fine for this)
- 1 juice (diced tomatoes with, I like Muir Glen organic tomatoes)
- 4 cups chicken stock (I used homemade chicken stock, but you can use canned broth or stock from a carton)
- 4 cups beef stock (I used homemade beef stock, but you can use canned broth or stock from a carton)
- ground cumin (1 tsp.)
- 1 Tbsp. chile powder (Ancho, I used ground Ancho powder from Penzeys)
- 1 tsp. chile powder (new mexico)
- aleppo pepper (1 tsp.)
- chile powder (use any combination of, or spicy red pepper that you have if you don't have ancho chile powder or aleppo pepper)
- 1/2 cup brown lentils (uncooked)
- 1/4 cup brown rice (uncooked)
- 1 cup peanut butter (for South Beach Diet, be sure to choose natural peanut butter with no added sugar)
