  • 3 tablespoons water (if onions start to catch)
  • 680 grams sweet potatoes (or 3 large, peeled and roughly chopped into smallish pieces)

  • 1 can aduki beans
  • 300 milliliters stock (rich, made from vegan bouillon like Marigold red tub, Green Oxo or other vegan ready-mades)
  • 1 red pepper (finely chopped)
  • 680 grams fresh tomatoes
  • 3 cans plum tomatoes
  • 1 tablespoon peeled fresh ginger (grated)
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon chilli powder (or to taste)
  • 3 tablespoons peanut butter (good quality, smooth or crunchy)
  • 3 tablespoons peanuts (roughly chopped)
  • 6 lime wedges
  • ground black pepper
  • salt
  • hot pepper sauce (to serve if liked)
