popular street food called Puff- Puff , which is known by different names depending on the country. Ghanaians call it Bofrot (togbei) , Cameroonians and Nigerians call it Puff-Puff (Puff) or beignet in French. It's crunchy fried outer shell collapses into a yeasty center that is chewy and yet pillowy soft. Puff puff is the simplest of recipes. It is just a very wet bread dough made of flour, water, salt, yeast and sugar, then fried instead of baked. Be sure not to add too much water to the dough or it will turn into an oil-soaked pancake when you fry it. You can add as much sugar as you would like, and I have seen recipes with vanilla, egg yolk and butter. This one is very simple and not particularly sweet, the perfect accompaniment to any meal.
Ingredients
- 1 1/2 cups lukewarm water
- 2 tsp. yeast
- 3 Tbsp. sugar
- 2 cups flour
- 1/4 tsp. salt
- 4 cups vegetable oil
Directions
- Combine the water and sugar in a mixing bowl
- Sprinkle yeast over water and leave for 5 minutes to soften. Mix in yeast, and leave another 10 minutes until it begins to get foamy
- Stir salt and flour into yeast mixture. Beat well to make a smooth batter
