- 3 lb. chicken thighs (boneless, skinless, based on how much meat you want in the stew and how many you're serving; my family likes lots of chicken in this stew)
- 1 whole butternut squash
- 4 sweet potatoes
- 3 onions (small, diced)
- 1/2 head celery (about 7 celery stalks, chopped)
- 1/2 bunch ribs (leafy greens, separated and diced, leaves chopped small, optional)
- 1 head cauliflower (chopped small)
- 2 cups bone broth (see how-to recipe link below in Recipe Notes)
- 3/4 cup peanut butter (salted organic; or make your own from sprouted peanuts to reduce antinutrients OR use your favorite nut butter, such as cashew butter)
- 2 Tbsp. lard (animal fat, tallow, or butter)
- 3 cloves garlic (crushed)
- 1 1/2 tsp. ginger (dried)
- 1 tsp. sea salt
- 1 tsp. cumin
- 3/4 tsp. chili powder (or paprika)
- 1/4 tsp. canela
- 1/4 tsp. cloves
- 1/4 white pepper
- 1/16 tsp. cayenne pepper
- Less than 1/16 tsp. stevia powder (or 1-2 Tablespoons coconut sugar, maple syrup or honey)
