- 8 cups pumpkin (cubed, 1 inch)
- 1 1/2 cups chicken (beef, or vegetable stock)
- salt
- freshly ground black pepper
- 2 Tbsp. olive oil
- 2 garlic cloves (smashed)
- 1 lb. ground beef (optional)
- 14.5 oz. crushed tomatoes (use twice as much if you eliminate the meat)
- 1/4 tsp. ground coriander
- 1 cup whole milk yogurt
- 1/4 cup chopped fresh mint (plus more for garnish)
- 1 tsp. minced garlic
