Absolutely fantastic! I do still miss the cheese and regular nachos but I’m also new to the paleo diet. I’m definitely making this again. Ingredients and cooking time were on point.

My husband and I love this dish! It really tastes as good as the junk food version of nachos. It is even better knowing this is healthy.

This was super good! Will make again. We had leftover seasoned beef from the recipe so I used it the next morning to top an omelet, it was really yummy. The sweet potato chips take a little work but they make it really good. I think next time if I'm in a hurry I'll use store bought Paleo chips.

Flavor was great but baking the sweet potatoes took really long...even though I used my food processor shreading blade to make the potato rounds. This is a great weekend meal, not a week night dinner.
