    It was tasty. Soft with a bit of a salty/sweet taste. I finished them under the broiler on low for about 4-5 minutes to get a browned look. I would buy smaller parsnips next time as cutting the core out of the big ones was a bit of a pain.

    They were absolutely DELISH!! Totally recommend. Although I did substitute the truffle oil for more extra virgin olive oil.

    It was delicious and different because for me parsnip is like, the most boring vegetable unless I make it with beef. But this recipe is definitely a win win.

    Excellent and sweet. I used Rosemary instead because I'm not a fan of parsley. Could also add sweet potato and would be just as good.

    So simple and delicious! Didn't have truffle oil but crushed some garlic over them for flavour instead and it worked fine. Will make again for sure
