- 2 acorn squash
- 1/2 olive oil
- 2 cups bread (whole wheat, I purchased fresh bakery style bread with nuts and seeds)
- 2 cups white bread (again, I used fresh bakery bread)
- 1 Tbsp. olive oil
- 1 small yellow onion (diced)
- 1/2 cup celery (chopped)
- 10 oz. cremini mushrooms (fresh, sliced)
- 1/2 lb. ground pork sausage (I couldn't find ground, so I used regular sausage, removing the casing first)
- 1 tsp. dried sage
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. dried rosemary
- 3 Tbsp. chopped parsley (fresh)
- 2 apples (cored and diced into small chunks)
- 1/2 cup dried cranberries
- 2 Tbsp. melted butter
- 3/4 cup chicken stock
