- 2 Tbsp. sauce (Yaki Soba, please see recipe below)
- 1 small onion (trimmed and cut into 2.5 cm, 1 inch lengths plus 3-4 scallions, sliced)
- 1 handful beansprouts
- 15 prawns (small, cooked and peeled)
- 2 Tbsp. vegetable oil
- 1 boneless, skinless chicken breast (cut into strips)
- 1/2 red pepper (trimmed, deseeded and thinly sliced)
- 1/2 green pepper (trimmed, deseeded and thinly sliced)
- 2 eggs (beaten)
- 1 oz. pickled ginger (/ Gari, for garnish, optional)
- 1 Tbsp. dried shallots (for garnish, optional)
- 1/2 tsp. toasted sesame seeds
- 3 1/2 floz light soy sauce
- 2 tsp. salt
- 2 tsp. sugar
- 1 tsp. dark soy sauce
