- 1 whole chicken (about 1,3 kg, cut into 10- 12)
- 1/2 lemon (fresh squeeze)
- 1 lemon grass (white part only, bruised it)
- 5 kaffir lime leaves (4- ,finely sliced)
- 1 pandan leaf (finely sliced)
- 1 turmeric (leaf, roughly sliced, skip if you don't have it)
- 1 tomato (big ,roughly chop)
- 2 tsp. salt (or to taste)
- 2 tsp. sugar (or to taste)
- 7 green chilli pepper (5- ,roughly pound- I use mortar and pestle)
- 3 spring onion (roughly sliced)
- 1 bunch kemangi (± 150 gr daun, asian basil leaf, leaf part only)
- 500 mL water (2 cup)
- 7 shallots (5- ,or 1 medium onion)
- 8 cloves garlic (7-)
- 10 pieces red chili pepper (8-)
- chili (🐔 some, padi, depends how spicy you wanna go or you can leave it whole)
- 5 candlenuts (4- ,roasted)
- 2 cms fresh turmeric (roasted, or ½ tsp powdered turmeric)
- 3 cms fresh ginger (roasted)
- 4 Tbsp. oil (3- ,for sautéing)
