- 2 Tbsp. coconut oil
- 2 tsp. salt

- 2 cloves garlic (crushed and minced)
- 3 tsp. Herbes de Provence
- 1/4 cup water
- 3 cans mushrooms (drained, 4 oz - 113 g)
- 1 can butternut squash (puree, or 1 cup 3/4 of homemade mashed butternut squash)
- 1/2 cup full fat coconut milk
- 3 tsp. salt
- 1/2 cup beets (cooked, diced)
