- 3 yellow onions (medium, about 3 – 4 cups – sliced thin)
- 1 clove garlic (minced)
- 1 green onion (sliced thin)
- 2 cups mushrooms (I used Baby Bella, roughly chopped very small)
- 5 cups vegetable stock
- 3 Tbsp. olive oil (and a little more for drizzling)
- sea salt
- fresh ground pepper
- 1 bay leaf
- 1 tsp. Worcestershire sauce (vegetarian friendly)
- bread (A small loaf of Fresh Baked, sliced about 1 inch thick)
- 1/2 cup mozzarella (shredded)
- 1 sprig fresh sage (optional)
