- 3 scallions (diced)
- 1/4 cup toasted sesame oil
- 1/3 cup rice vinegar (unseasoned)
- 2 Tbsp. soy sauce (low-sodium)
- 1 tsp. pure maple syrup
- 1 Tbsp. ginger (freshly grated)
- 1 Tbsp. fresh lime juice
- 1 1/2 Tbsp. tahini
- 2 tsp. toasted sesame seeds
- 2 Tbsp. peanut oil
- 1/2 cup chickpeas (cooked, if from the can rinsed, drained and patted dry)
- 1/4 tsp. kosher salt
- 3 Tbsp. toasted sesame seeds (both white and black work here!)
- 2 hard boiled eggs (peeled and roughly chopped)
- 4 radishes (thinly sliced)
- 1 daikon radish (small, cut into thin matchsticks)
- 1 avocado (small, roughly chopped)
- 3 handfuls arugula (mustard greens, and mizuna, or any green you have on hand)
