Made this for my boyfriend and I for dinner I didn’t use the rice i was concerned it would be different but it was AMAZING seriously this salad with some soup is the best rainy day lunch/dinner super light and refreshing I used left over rotisserie chicken and just shredded it with a fork and heated it up for a min in the microwave I will definitely make again thank you!

This was delicious! I made this for dinner for me and my husband and he loved it. I added some slivered almonds for some crunch but that was the only modification I made. It was just as good when I packed the leftovers for my lunch.
