- 1 1/2 lb. medium shrimp (raw, peeled deveined, chopped coarsely, sprinkle fresh lemon juice over them)
- 2 portuguese rolls (or 3 to 4 slices of a dense country style bread, chopped into coarse bread crumbs; sprinkle with regular Old Bay® seasoning, toss to distribute evenly and set aside)
- 1 batch green onions (minced, or 3 jumbo spring vidalias)
- 1 jumbo egg (– or none. I’ve tried it both ways and I prefer it without the egg.)
- sea salt
- freshly ground black pepper
- 3 Tbsp. mayo (. Any mayonnaise will do but I keep this one in the pantry.)
- 2 tsp. Dijon mustard
- Old Bay
- lemon
- seasoning
