- 2 tsp. baking powder
- 1 tsp. bicarbonate of soda
- 1 tsp. xanthan gum
- 1/2 tsp. fine sea salt
- 175 grams ground almonds
- 330 mL milk
- 1 1/2 Tbsp. white wine vinegar
- 150 grams unsalted butter (room temperature)
- 400 grams caster sugar
- 3 large eggs (room temperature and lightly beaten together)
- 2 tsp. vanilla extract
- 1 tsp. orange extract
- 1 Orange (finely grated)
- 190 grams unsalted butter (softened)
- 400 grams icing sugar (sifted)
- 1 pinch fine sea salt
- 1/2 tsp. orange extract
- 4 tsp. curd (orange)
- 120 grams orange juice (sieved, I used freshly squeezed blood orange)
- 1 Tbsp. icing sugar
- 3 grams gelatine (sheet)
