I pan seared and cooked in a cast iron pan. Left the fat trim on and turned every 3 minutes on med-high heat for total of 15 minutes cook time. I added canned pineapple drained of juice at 6 minutes cook time. I also used salt, pepper, dried thyme, garlic powder, smeared some marmalade on the chops and used some of the pineapple can juice to marinade the chops about 20 minutes prior to cooking. Chops came out perfect and the family loved them. Used basmati rice and steamed broccoli as sides. I did add a drizzle of the pineapple juice to the yogurt mixture too. Will definitely make again!

We found them dry. I love the idea of the pineapple and pork chops and I do feel the marmalade was a nice touch. However, we trimmed the fat and I feel that this may not have been the best idea at the beginning. I think it would have been better to trim it later on or at the end. However, this is a repeatable recipe and easy to put together.
