- 2 bunches broccolini (can sub broccoli)
- 1 delicata squash (seeded + sliced into half circles)
- 5 Tbsp. olive oil (divided, 2+2+1)
- salt

- 1 1/2 lb. chicken tenders (boneless skinless, or small thighs)
- 1 lb. cremini mushrooms (sliced)
- 2 cloves garlic (minced or grated)
- 2 Tbsp. fresh thyme (chopped)
- 1 Tbsp. flour
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1 cup milk (I like to use 2% or canned coconut milk)
- 1 Tbsp. white truffle oil
- 1/2 cup Parmesan cheese (grated)
- 1/4 cup fresh parsley (chopped)
- 1 pinch crushed red pepper flakes
- 1 1/2 cups milk
- 1 1/2 cups water
- 1 cup polenta
- 2 Tbsp. butter oil (or coconut)
- salt
- pepper (to taste)

Kids loved it. Didn't have any white wine so I used sherry instead and it turned out great. Served with risotto. Added truffle oil and Parmesan at the end.
