- 2 chillies (fresh, more or less depending on your heat tolerance)
- 2 lemongrass stalks

- 8 garlic cloves
- 1 inch fresh ginger (piece of)
- 1 handful coriander leaves (fresh, & stalks)
- 4 dates (medjool, or 8 smaller)
- 1 lime (juice of)
- 1 tsp. apple cider vinegar
- 1 Tbsp. ground coriander
- 1 Tbsp. ground cumin
- 1 tsp. canela
- 1 pinch salt (and black pepper)
- water (Boiled, as needed)
- 2 tsp. oil (coconut, rapeseed etc)
- 1/2 curry paste
- 6 lime leaves
- 6 cardamom pods
- 1 white onion
- 750 grams new potatoes (baby)
- 1 Tbsp. soy sauce (good)
- 1 can coconut milk
- 200 grams spinach (or any other greens)
- 50 grams cashews
