I was very happy with the outcome. I did add a few of my own twists though. I made sure to use Red Bell Pepper, the sweetness is nice addition to the spice. I also added a 14 oz can of diced tomato with green chilis, this adds a bit more texture with a bite from the green chili. I then added 6 oz of tomato paste at the end and simmered for 1 hour. This thickened up the chili a bit (just my preference). This chili was so much better the next day after all of the flavors meshed together overnight in the fridge. Serve as suggested with cheese, sour cream and scallion. For an hour and a half cook time with about 10 to 15 minute prep, this recipe is too delicious and easy to not try!
