- 1 lb. bulk sausage (or removed from casings I like chicken sausage but any will do)
- 1 cup onion (chopped)
- 1 cup celery (chopped)
- 1 cup carrots (chopped)
- 3 large garlic cloves (chopped)
- 1/4 cup parsley (chopped)
- 3 Tbsp. tomato paste
- 14 oz. tomato sauce (crushed tomatoes, will work in a pinch)
- 14.5 oz. roasted tomatoes (diced)
- 6 cups chicken stock (prefer low sodium)
- 14.5 oz. beans (cannelli, drained and rinsed)
- 1 cup ditalini pasta (or any small pasta like elbow will work)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. italian seasoning (dried, a combo of dried basil and thyme will work too)
- grated Parmesan (Fresh)
