Wonderful! If I did it again I would boil the potatoes a little less and only mash 1/2 of them to leave some good chunks. It even got kid approval!

SO delicious! This is a year-round keeper! It would be good on a cold day too but I served it in the summer heat to my very impressed and satisfied kids and partner. I will need to keep bacon in the house from now on so I can make this for dinner when all I have on hand is potatoes! A spinach salad rounded it out perfectly. Also reheated well. I will make a double batch next time so I can have more leftovers too!

It was amazing!! After I drained the potatoes, i added alittle more chicken broth to it than I heated it up with the old chicken broth why I was mashing the potatoes. I used pink Himalayan salt instead of white salt. I normally suck at making potato soup but this was by far the best and easier recipe! It does only take 30 minutes or less too!

Turned out amazing! I did sub real bacon for the instant bacon, &used garlic salt in place of reg salt.
