I didn’t have tomato paste, so I added what I thought was a 28-oz can of crushed tomatoes. It turned out to be more diced tomatoes, but my kids still liked the soup. I used alphabet pasta instead of orecchiette. Added a bay leaf for more flavor.

Very hearty, flavourful pot of soup! I let it simmer a bit longer than the recipe called for. Definitely a keeper!

One of the best new soup recipes I've tried in quite some time! Tastes even better the 'next day'! I did let mine cook about 30 minutes longer to allow the flavors to meld together! When tasting at the recommended 30 minutes, it was good but I felt it could benefit by allowing it to cook a bit longer. After an hour? Oh my! Perfect!! Definitely a winner IMHO!
