Preheat the oven to 400°F.

Line a large baking sheet with aluminum foil.

Season the pork ribs liberally with salt and black pepper on both sides. Place the ribs meat side up on the baking sheet.

Spread the barbecue sauce evenly over the top of the ribs.

Roast the ribs on middle rack of oven until nearly cooked through and lightly charred, 25-30 minutes. The internal temperature of the meat should be at about 180°F.
PRO TIP Pork is safe to eat at an internal temperature of 145°F, but connective tissue in the ribs does not begin to break down until 160-180°F, which gives the meat a tender, pull-off-the-bone texture.

Set the oven to broil. Broil the ribs on top rack of oven until the barbecue sauce starts to caramelize, 4-5 minutes. Keep a close eye on the ribs to ensure they do not burn.

Check to see that the ribs are done. Remove from oven or add time as needed.

Allow the ribs to cool for 3-4 minutes on the baking sheet, then transfer to a cutting board. With a sharp knife, cut the ribs into desired portions, and serve immediately. Serve with additional barbecue sauce if desired
