So easy to make and surprisingly tasty! I have made it several times, because my roommates and I love it! Also, I have found that baking the sweet potato in the microwave works just as well as in the oven!

Wonderful combination! It tasted great and had a lovely sweetness to it. I will definitely be making this again!

I was surprised that this had as much flavor as it did. Putting it on top of the sweet potato definitely added something! I cooked the chicken in the slow cooker with BBQ sauce and bell pepper for easy shredding.
