  • 1 teaspoon olive oil
  • 2 tablespoons all purpose flour (or cornstarch)
  • 1 cup dry white wine (good)
  • 1 1/2 cups Gruyere cheese (Shred it)
  • 1 1/2 cups Fontina cheese (Shred it)
  • 1/2 cup gorgonzola cheese (I found it in crumb form. Worked great.)
  • 1 teaspoon lemon juice
  • salt (to taste)
  • 1 teaspoon black pepper
  • 3 drops truffle oil (I got mine from Trader Joe's)
  • 1/2 milk (& half, heavy cream.)
