- 1 lb. lean ground turkey (chicken, or beef)
- 1/4 diced red onion
- 3 cups zucchini (sliced into thin half moons)
- 2 cloves garlic (minced)
- 1 cup enchilada sauce (see recipe above)
- 1 cup cottage cheese (I use the 2% one)
- 3 Tbsp. plain greek yogurt
- 1 1/3 cups shredded sharp cheddar
