  • 1/2 cup fruit (mashed, or veg, grated apple or carrot, pureed pumpkin, butternut squash or sweet potato, mashed banana, etc. whatever floats your boat, but the texture of the pancakes will vary depending on what you use)
  • 1 tablespoon almond butter (or nutbutter of choice)
  • 1/4 cup coconut milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons coconut flour
  • 1 tablespoon ground flax seed
  • 1 tablespoon psyllium husk (if you don't have this then just use more flax or almond flour)
  • 1 teaspoon spices (choice, I usually use cinnamon and nutmeg, but cardamom would be great too)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons apple cider vinegar

    Used Banana as my fruit and added a tablespoon of maple syrup and blueberries! Nice and fluffy compared to other paleo pancake recipes I've tried!
