- 100 mL vegetable stock
- 1 Tbsp. tomato puree
- 2 medium tomatoes (skinned and chopped into chunks)
- 2 tsp. cumin seeds
- 1 tsp. ground tumeric
- 1/2 tsp. mustard seeds
- 2 cloves garlic (Finely chopped or grated)
- 1 tsp. chili powder (Or one fresh chili. Adjust according to taste - I like heat!)
- 2 tsp. ginger (Finely chopped or grated)
- 1 onion (Medium, Finely Sliced)
- 150 grams spinach (Torn or roughly chopped)
- 1 tsp. coconut oil
- 1 handful coriander (To Garnish, optional)
- 1 Tbsp. low fat yoghurt (To Garnish, optional)
