- 12 oz. baby portobello mushrooms (sliced)
- 5 leaves kale (lacianto, ribs removed & shredded, about 2 cups)
- 2 cups cooked quinoa
- 2 cups tomato sauce (I love Trader Joe's Arrabiata!)
- 4 oz. fresh mozzarella cheese
- salt
