- 5 cms galangal (piece, 25g, sliced)
- 2 garlic cloves (bruised)
- 4 kaffir lime leaves
- 1.5 liters chicken stock
- 6 red chillies (small, chopped)
- 1 Tbsp. nam prik pao (Thai chilli paste – from Asian grocers or other chilli paste)
- 250 grams cherry tomatoes (vine-ripened)
- 150 grams oyster mushrooms
- 500 grams peeled prawns (tails intact, deveined, butterflied)
- 2 limes
- 1/4 cup fish sauce
- 3 tsp. coconut sugar
