Delicious, comforting and nutritious. I modified it, using a brown onion instead of spring onions, adding a leek and a few carrots that needed using up, a couple of vegetable stock cubes, a carton of cream instead of Greek yogurt and no mint. I loved the taste of the watercress, and my husband said it reminded him of a soup he once had in a Michelin starred restaurant - it was just as good!
