- 1/4 cup extra virgin olive oil
- 1 bunch flat leaf parsley (stalks finely chopped, leaves chopped)
- 3 garlic cloves (very finely chopped)
- 4 anchovy fillets in oil (drained, chopped)
- 1 tsp. chilli flakes (dried, optional)
- 500 grams grape tomatoes
- 2 Tbsp. tomato paste
- 1 cup dry white wine (we used chardonnay)
- 20 prawns (large green, peeled, tails left intact, deveined)
- 25 grams unsalted butter
- 50 grams grated Parmesan (finely, plus extra to serve)
