15 Minute Quinoa Burrito Bowls

  • 1 cup dry quinoa (I use Ancient Harvest Brand)
  • 2 cups vegetable broth (you can just use water too)
  • quinoa (Note the, /liquid ratio is based on cooking directions from the Quinoa brand I use. If you're using a different brand follow their instructions for cooking.)
  • 1 cup corn
  • 1 can black beans (rinsed)
  • 3 limes (cut into wedges)
  • 1 bunch romaine lettuce (chopped)
  • 1 avocado (sliced)
  • 3 Roma tomatoes (chopped)
  • 1 bunch cilantro (chopped and stems removed)
  • 2 green onions (chopped)
  • 1 cup salsa (you can use any kind, depending on how spicy you like it - I used Mild for a kid friendly meal)

    I loved it and it came together fast. Only change i made was adding some thinly sliced left over steak.

    Very easy and tasty! I used premade guacamole rather then avocado and added a dolip of sour cream which worked well to create a simple dressing.

    I have made this a couple of times but instead of quinoa I used brown jasmine rice and added grilled chicken. I don’t like the texture of quinoa alone so I mix with brown rice or leave it out. It was delicious.

    horrible!! my son spit it out. it was definitely missing something. I think a whole clump of cilantro is too much (and I absolutely LOVE cilantro) I added a little salt to my second bowl which seemed to help a little bit. very disappointed.

    We added grilled shrimps and scallops with a bit of shredded cheddar and it was perfect! Will definitely be making again.
