- 15 oz. garbanzo beans (drained and rinsed)
- 2/3 cup scallion (minced)
- 3 cloves garlic (pressed)
- 1 tomato (medium ripe red, seeds removed and chopped)
- 3 celery ribs (medium, diced into about 1/2-inch pieces)
- 3 Tbsp. fresh lemon juice
- 2 1/2 Tbsp. chopped fresh mint (or 2 1/2 teaspoon dried mint)
- 3 Tbsp. fresh parsley (chopped, or 3 teaspoons dried parsley)
- extra-virgin olive oil (to taste)
- 1 head romaine lettuce (chopped with outer leaves removed and discarded)
- cracked black pepper
- 1/4 cup feta cheese (optional)

Directions
- Mix all ingredients except lettuce and cheese in a bowl and season with salt and pepper to taste.
- Serve on bed of chopped romaine lettuce and sprinkle with feta cheese, if desired.
