My kids loved it! There’s something a little bitter that was unexpected, and I can’t tell what it is, but I love it other than that!

Surprisingly really good used honey instead of coconut sugar and it turned out amazing

I struggled to get the rice noodles cooked as shown in the photos. The basic cooking part was fine but I guess it was frying them that was hard. Maybe I didn’t have enough liquid to fry them in as they got very crispy. which is okay, a nice crispy noodle is good but wasn’t easy to add as regular noodles are for a toddler.

I did make it, and I think it was pretty successful! I used sesame oil and didn't have scallions, so I used fresh chives from my herb garden. I wasn't feeling like any sweetness, so I skipped the sugar and added salt and pepper, and it was pretty darn good! I also added some toasted sesame seeds for flavor and toasted walnuts for some protein to make it a complete meal. May try some egg next time. I'll probably make it again because it was easy and pretty tasty! Thanks so much for telling me the proper way to cook rice noodles, too.
