Very enjoyable soup. Instead of chicken I added mushrooms. Also added a full can of coconut milk and since I thought it needed some sweetness, 2/3 tablespoons of agave. It was great, included some thinly sliced red pepper. It all went in a day. Flavors would probably come out more on day two. Next time I’ll add shrimp

Good soup, nice flavour. I let it simmer for 30 min to bring out the flavours. Next time I will add less noodles and more coconut milk. I added slightly more red curry paste than instructed. Squeezed one lime while cooking. Forgot to add the cilantro but I think that would be a nice addition. Everyone ate it even my picky 21 year old son.
Soup actually tasted much better the following day as I guess the flavours really came out

This was literally the easiest and most refreshing recipe I've ever made! I did an Asian themed dinner for my family this past weekend, making this soup and lemongrass chicken with sticky rice and stir fry veggies. The soup was really just an appetizer but everyone LOVED IT! It was DELICIOUS and just TO DIE FOR!!! And, it really did only take a few minutes to make. SCORE!!
