- 2 Tbsp. oil (I use olive oil)
- 1 cup onion (diced)
- 1/2 cup celery (diced)
- 1/2 cup carrots (diced)
- 3 garlic cloves (diced)
- 1 can diced tomatoes
- 8 sprigs fresh thyme (or 1 t dried thyme)
- 2 bay leaves
- 1/2 tsp. salt (the ham and bone give plenty of salt)
- 1 tsp. black pepper
- 1/2 tsp. paprika
- 1 pkg. beans (Mixed or 15, discard any seasoning packet, not soaked)
- 1 ham bone (with some ham remaining, make sure it will fit in your pressure cooker - my ham was almost 8 lbs, and the bone barely fit)
- 7 cups water
