This turned out great! Very refreshing light cold salad with a little bit of heat in the background. I added some fresh pineapple which added an extra layer of sweet flavor. Served the salad on a bed of lettuce but could have easily incorporated some cold pasta shells for a nice summer time dinner meal. Great with a glass of Riesling too! ;-)
