  • 500 milliliters soya (or other neutral flavoured non dairy milk like a nut or seed milk, for the best results use a thick, rich milk or creamer)
  • 1 tablespoon carrageenan (Kappa, or 2 tbsp agar powder*)
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons coarse salt (or 1 tsp fine salt)
  • 40 grams tapioca starch
  • 1 teaspoon paprika (use smoked for a smoky cheese)
  • 30 grams nutritional yeast flakes
  • 1/2 teaspoon mustard powder (or 1 tsp prepared mustard)
  • 1/4 teaspoon turmeric (for colour)
  • 1 tablespoon tomato puree (or ketchup)
  • 3 vegan Worcestershire sauce (shakes of)
  • 1 tablespoon white miso paste
  • 1/2 cup milk (with rejuvelac or vegan kefir)
  • 1/4 teaspoon vitamin c (pure, powder/citric acid/vegan lactic acid powder.)
