I was looking for a healthier option for quesadillas and I had a package of ground turkey meat . I decided to season it myself with the things I like and to get away from traditional boxed taco seasonings. I have added grilled corn and rice to the quesadillas and that was delish as well. The variations are endless and the best part is that it is relatively inexpensive and is fast to make.
- Break up ground turkey in skillet on medium heat and season to desired taste. Cook until browned. Remove from skillet and place in side dish
- Spray pam on skillet , Place 1 wrap on skillet and wait for it to bubble. Place two tablespoons of ground turkey on one half add a handful of cheese on top .As cheese begins to melt fold over with spatula and continue to cook until wrap is browned. Keep heat on low- medium and spray pam on skillet every 2 wraps , so as not to burn them.
- Serve with Spanish rice and sour cream or guac
