- 1 avocado
- 1 lime
- 1 clove garlic
- 1/4 cup pine nuts

Very good as is, I only added the rest of the lime juice from the other half when cooking the Cajun shrimp, also edited the amount of cayenne so as not to give my boyfriend crazy heartburn later

So good! Used veggie barilla noodles instead of zoodles cause I don’t have a spiralizer. Best pesto I’ve had! This will be my go-to pesto sauce(:

Can different brands of parchment paper affect the way zoodles cook? Other foods I have cooked on this roll come out soggy but not on anther brand I used. Back to this recipe....delicious, tasty easy, healthy.

A new and different dish for us and it was freaking awesome! I didn't know zucchini could have such a tasty personality. I guess it's all about what you pair it with. And my T2D is giving me high-fives for smart eating. Feels pretty dang good.

Super good! Whole family loved it. Was the first time I made zucchini noodles and they weren’t soggy or wet. Definitely will be making again

Turned out great, helping note….if you’re using a vegetti to make the noodles you’re only gonna need about 4 big zucchini’s, also you can use a hand blender instead of the processer, only for a bolder flavor use 3/4 cup Parmesan and a second garlic clove.

OMG so good. I never knew zucchini pasta can taste so good with the sauce and the cajun shrimp it was just the perfect combo of flavors. Everyone love it. I can't wait to make it again.

Absolutely amazing! I didn’t think I’d care for the zoodles but the avocado pesto nails this dish. I could eat this daily! Love it!
