Description

- 1 garlic cloves
- 1/2 tsp. grated ginger
- 2 Tbsp. brown rice miso
- 2 Tbsp. OMED® Yuzu Oil (or substitute with extra-virgin olive oil; for marinade)
- 1/4 cup mirin (sweet rice wine)
- 2 thick center-cut wild salmon fillets (4 oz. each)
- 1/2 lb. broccoli florets (trimmed)
- 1 Tbsp. OMED® Yuzu Oil (or substitute with extra-virgin olive oil; for broccoli)
- 1/2 tsp. Red Boat® Fish Salt (or substitute with sea salt; for broccoli)
- 1 cup water (for fonio)
- 1/2 cup Yolélé® African Fonio (or substitute with rice, couscous, quinoa, or millet)
- 3 Tbsp. sliced almonds (toasted)
- Red Boat® Fish Salt (or substitute with sea salt; to taste, for fonio)
- 1 scallion (green and white parts)
- gochugaru chili flakes (Korean chili flakes; buy at well-stocked grocery stores, Asian markets, or online; for garnish, optional)

I couldn't find most of the ingredients so i ended up with couscous, sea salt and fish sauce, white miso and crushed red pepper but y'all it was still so good.

Straight forward and easy to make with a delicious sauce. May cut the yonio in half next time if cooking for two.
