- 1 piece fresh galangal (aka galangal root, large)
- 1 sprig makrut lime leaves (also called Thai lime, for soup)
- 1 lb. whole chicken (3 lb. per chicken, or 1-2 carcasses)
- 2 garlic cloves (peeled)
- 1 shallot (large, sliced)
- 2 Thai chilies (fresh, broken in half, more or less to taste)
- 1 can straw mushrooms (drained and rinsed, 15 oz. per can)
- 8 large shrimp (or more depending on size, peeled and deveined)
- 6 Tbsp. fish sauce
- 6 Tbsp. fresh lime juice
- 3 Tbsp. chili paste in soybean oil
- cilantro sprigs (for garnish, optional)
- 3 makrut lime leaves (also called Thai lime, for garnish, more as desired)

Awesome pawsome! Made it with a little more heat and added some coconut milk at the end maybe 1/4-1/3 cup
