- 1 cup dry white wine
- 1 cup water (for marinade)
- 2 Tbsp. fresh lemon juice
- 1 tsp. Tabasco (or other hot sauce)
- 1/2 tsp. black pepper
- 1/3 cup brown sugar (packed)
- 2 Tbsp. extra-virgin olive oil
- 12 salmon fillets (4 oz. per fillet, 2 inches thick, boned and skin on)
- water (to soak 1 cup wood chips; apple, cherry, or alderwood)
- nonstick cooking spray
