- 2 Tbsp. whole iru (fermented locust beans)
- 2 red bell peppers
- 1 tomato
- 1/2 habanero chile
- 1/2 red onion (for purée)
- 1/2 cup palm oil (for purée)
- 1 tsp. kosher salt (for onions and purée, plus more to taste)
- 1/2 cup stockfish (dried fermented cod, also known as panla by the Yoruba)
- 2 cups ground egusi seeds (ground melon seeds)
- 1/2 tsp. kosher salt (or to taste, for egusi paste)
- 4 cups baby spinach (loosely packed, can substitute with chard or mustard greens)
- 2 pinches sugar
- arugula (for stew and garnish)
