- coarse kosher salt (for squash)
- black pepper (for squash)
- 4 Tbsp. butter (for squash)
- 1 fennel bulb
- 1 Spanish onion
- 2 garlic cloves
- 1 Honeycrisp apple (or Fuji)
- 3 Tbsp. extra virgin olive oil (for apple mixture)
- coarse kosher salt (for apple mixture)
- 1/2 cup dry white wine
- 1 cup apple cider
- 3 cups chicken stock (or vegetable stock, use more or less as needed)
- 12 Tbsp. unsalted butter (for brown butter)
- 1/2 dried lime (1 tsp. black (Persian) lime powder per batch, buy either at Middle Eastern markets or online; alternatively, use extra lime zest in addition to the fresh lime zest)
- 2 limes (fresh, for zest)
- 1/2 tsp. crushed red pepper (more or less to taste)
- 1/2 tsp. Hondashi (granulated Japanese soup base; buy at Asian markets or online; alternatively, use a pinch of salt)
- 1 Tbsp. extra virgin olive oil (for spicy seeds)
- 1/2 cup raw sunflower seeds
- 1/2 cup raw pumpkin seeds (pepitas)
- 1 cup chicken stock (or vegetable stock, for thinning, optional)
- coarse kosher salt (optional, for seasoning)
- black pepper (optional, for seasoning)
- 2 scallions (for serving)
