This apple pie is the girl-next-door ... all grown up. Learn to perfect a tender and flaky crust filled with a melting combination of apples that stay stacked mile high under the woven lattice top.

  • 2 tablespoons sugar (for piecrust)
  • 1 1/2 teaspoons salt (for piecrust)
  • 1 1/2 cups unsalted butter (cut into small pieces, chilled)
  • 1/2 cup vegetable shortening (or lard, chilled)
  • 1/2 cup ice water (for crust, use more if needed)
  • 1 tablespoon vodka
  • all purpose flour (for work surface)
  • 4 pounds apples (such as Haralson, Braeburn, Cortland, McIntosh, Gala, and/or Granny Smith; including different apple varieties will create a more textured pie)
  • 1 cup brown sugar (packed, for pie filling)
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon salt (for pie filling)
  • 2 teaspoons lemon juice
  • 1 egg
  • 2 tablespoons water (for egg wash)

    Wow! Took this to a neighborhood get together and it was by far and away the hit of the day. The crust is so flaky and delicious.
